INGRIDIENTS:

250 g of homemade or good quality mayonnaise

80 g tomato sauce

80 g of chilli sauce or chili pepper seasoning

1 grated small onion

1 red or green pepper without seeds and finely chopped

1 teaspoon Worcestershire sauce or to taste

1 teaspoon Tabasco sauce or to taste

1 teaspoon of brandy or to taste

PREPARATION:

  1. In a bowl, mix mayonnaise, tomato sauce and chili pepper seasoning well. Add the onion, pepper, Worcestershire sauce, Tabasco sauce and brandy to taste.
  2. Cover the bowl with a transparent plastic and refrigerate the sauce until it is used. Prepare it at least 20 minutes in advance and leave it covered in the refrigerator for the flavors to ripen.

Chef’s Note: Garnish an iceberg lettuce salad with this mayonnaise. To turn this salad into a full plate, add cold cooked prawns and garlic-coated toast.
